Winemaking Process Grapes hand-picked and grape must handled in a reductive style (without oxygen exposure). Juice kept cold and pressed gently using a vacuum press. 90% of the wine sent to tank and the rest to French oak barrels and fermented using commercial yeast.
Maturation After fermetation the wine is left on the less for 4 months and then racked to tank. The barrel fermented component is left in oak barrel after fermentation and then added to the final blend 4 months later. The French oak used are 2nd and 3rd fill barrels.
Tasting Comments A rich fruity nose with juicy tropical flavours on the nose and palate. A wonderful crisp, tropical, lemon, lime palate with a crisp refreshing finish.
