Winemaking Process Fermentation initiated in French oak barrels using a series of different commercial yeast cultures and 20% natural yeast. Temperatures controlled with special barrel cooling plates within the barrels and the wine is kept on its lees for the whole barrel aging period to develop complex flavours and soft, creamy mouth feel.
Maturation The wine fermented and was aged for 10 months in 1st, 2nd and 3rd fill barrels. Lees stirred throughout the fermentation process.
Tasting Comments This Chardonnay shows an exciting medium straw colour with rich citrus and oak nuances. Barrel fermented in 30% new French oak gives the wine a toasted and creamy oak character all together in perfect harmony. Excellent length on the palate with marmalade and an almond, flower finish alongside a balanced, crisp and clean acidity. The result, a classic, rich and well balanced Chardonnay.
